Baingan
bharta or Baingan ka bhurtha is a North indian special dish cooked
with smoked eggplant.The word 'Bharta' refers to dishes in which the ingredients are roughly mashed either before or after the dish is prepared.This is one of our family favourite
dish.Traditionally eggplant is roasted in charcoal grill but we can
use stove top method or oven.I mostly prefer stove top method, it
gives very heady and smoky flavour.It goes well with any indian
breads...

Steps:
- Apply some oil to the eggplant.Roast the eggplant over gas stove on medium flame by turning it all the sides so that skin turns black evenly all over.You could also do it in the oven.It takes around 10-15 minutes to cook the whole eggplant.Once it is fully cooked, wait for it to cool down and then peel off the skin and mash well.

- Heat
oil in a pan,add cumin seeds,when they pop up add crushed garlic fry
for 2 sec then add finely chopped onions fry for 5 mins then add
chopped green chillies mix well and cook till onions turn golden
brown.

- Then add chopped tomatoes and all spice powders turmeric powder,red chilli powder,garam masala,coriander powder and cumin powder mix well and cook till tomatoes turn mushy.

- Add chopped eggplant and salt mix well and cook for 2 mins the add ½ cup water,cover and cook till oil separates.

- Garnish with coriander leaves and serve hot with any Indian breads.
