Kadai Panner | Restaurant Style Kadai Panner

Kadai panner is one of my favourite dish among other panner recipes..It is the combination of bell peppers and tomatoes with some aromatic spices. its very easy to make and tastes great.if I want to prepare any veg dinner recipes for my guest my first choice is this. Enjoy this delicious gravy with some freshly made phulka , nan or pulao.

Ingredients :


Panner
1 cup
Onion
1
Green chilli
4
Ginger & Garlic (crushed)
1 tbsp
Tomato Puree
1 cup(From 3 tomatoes)
Tomato paste(optional)
2 tsp
Coriander seeds
1 tsp
Cumin seeds
1 tsp
Kasoori methi(Dried fenugreek leaves)
1 tsp(crushed)
Coriander powder
1 tsp
Cumin / jeera powder
1 tsp
Gram masala
½ tsp
Turmeric powder
½ tsp
Bay leaf
1
Cloves
3
Cinnamon
½ inch stick
Capsicum
1
Coriander leaves
For garnishing
Oil
1 tsp
Ghee or Butter
1 tsp



Steps :

  • Heat tsp of ghee in non stick pan fry the cubed panner on both sides till golden brown.Drain on absorbent paper and place in lukewarm water.It keeps panner soft.

  • Add oil in same tawa add bay leaves,cloves,cinnamon,cumin seeds and crushed coriander seeds when it splutters add crushed ginger & garlic fry till raw smell leaves.

  • Then add finely chopped onions fry till transparent then add chopped green chillies fry for 2 sec.

  • Add tomato puree cook for 5 mins then add turmeric powder,coriander powder,cumin powder,garam masala,cook for 5 mins then add kasoori methi and tomato paste mix welland  cook for 10 mins on a medium flame or till oil comes out.

  • Add cubed capsicum mix well and sauté on a medium flame for another minute.

  • Then add cubed panner,1 cup water and salt mix well and cook on a medium flame, while stirring once in between until gravy thickens.

  • Add coriander leaves,stir gently and switch off the stove.
