Gajar Ka Halwa / Carrot Halwa

Gajar Ka Halwa (sometimes known as Gajrela, Carrot Halwa or gajar ka gajerela) is a traditional indian sweet with the combination of grated carrot,milk,ghee,nuts and sugar. I made this to my dear friend who came to my home first time after her marriage..Without dessert how to welcome a new couple that doesn't look good right?..  I was initially thinking of making mysore pak but my mind was not ready to do that and finally ended up with our family's fav gajar ka halwa. At the end, I am very pleased that they loved this sweet...I am very happy to post this recipe today because today is my dad's birthday. If I was in my home,  I would have cooked this for my dad but I couldn't.. so to celebrate my Dad's birthday, I am posting this today...Happy Birthday dad :)

Ingredients :

Serves : 5

2 ½ cups
1/4 - 1/2 cup(As per taste)
4 tbsp
2 tbsp
Raisins & Cashew
1 tsp
Few strands
Green cardamom powder
¼ tsp
Mawa (khoya) (Optional)
½ cup

Steps :

  • Wash and peel the carrot and grate them using grater.

  • Heat a tsp of ghee in a pan fry raisins and cashews,keep aside.

  • Heat remaining ghee in a thick bottomed pan,add grated carrot and saut√© for 5 mins or till raw smell leaves.

  • Then add milk and allow it to boil,then add saffron mix well and cook it covered for 10 mins or until milk evaporates and carrots becomes soft and cooked. Keep stirring in between and cook over a low heat to avoid burning.

  • Then add cardamom powder,sugar mix well and cook for 3 to 5 mins.

  • When the milk has almost dried, add raisins, cashews and khoya stir well and continue cooking until the liquid dries up and the halwa leaves the sides of the pan.

  • Garnish with chopped nuts,serve warm or cool...
