No Bake Mango CheeseCake / Eggless Mango Cheese Cake / Mango CheeseCake

I am not a big fan of cricket but my hubby is :) on Saturday evening, My hubby was watching the IPL match between RCB and CSK.. I was sitting next to him.. My hubby asked me which I am going to support.. I replied Yellow team.. The reason is very simple not because they are Tamil but because of their Yellow Color jersey.. 

The whole stadium was painted with yellow. It was an awesome atmosphere  After seeing this, I started following the match very actively.. I almost started shouting for every ball.. The ending was very classic.. I told my hubby I am going to celebrate this with an yellow color recipe  I bought Mango pulp long back and that was sitting in my kitchen idle. I was planning a cheese cake also for quite some time. All of a sudden, I come up with a plan to prepare cheesecake with mango topping.. Bingo:)

Cheesecake is the only cake which doesn't require baking.. So if you don't have oven in your house and want to cook some cake, then this is your recipe. once you prepared the cake, you need to keep it in Fridge for at-least 2 hours. No more stories.. Jumping into action now.. here is the recipe. I was so happy when I was preparing this recipe and so I took all step by step pictures :)

Serves : 5

Ingredients :

For the Base 

Digestive Biscuits
125 gms
Butter
40 gms

For the Filling 

Philadelphia Cream Cheese
170 gms
Mango Pulp
¾ cup
Whipping Cream
125 ml
Gelatine
5 gms
Hot water
¼ cup
Icing sugar
2 tbsp
Sugar
¼ cup

For the Topping

Mango pulp
½ cup
Gelatine
5 gms
Hot water
¼ cup



Steps :

For the Base 

  • Whiz the Digestive Biscuits in a food processor.

  • Add melted butter into the biscuits mix well until the mixture is well combined.

  • Pree the mixture into the bottom of an 8” deep round springform pan or any pan with a removable bottom or a 9” regular round pan or use individual glasses.

  • Refrigerate while preparing the rest of the cheesecake.

For the Filling 

  • Dissolve gelatine in hot water for 5 mins or until dissolves.

  • In a large mixing bowl add whipping cream and icing sugar, mix well till becomes soft.

  • Then add the cream cheese and sugar,comine well till it becomes soft.

  • Then add mango pulp and gelatine mixture into the cream cheese mixture and mix well till well combined.

  • Pour this mixture over the prepared crust, level with a spoon and chill in the refrigerator for 3 to 4 hours.


For the Glaze Topping 

  • Dissolve the gelatine in hot water.
  • When it dissolves,add it to the mango pulp and mix well.

  • Pour this over the cream layer,Refrigerate overnight or till you serve.
