Blueberry Muffins - Guest Post by Priya Ranjit

Dear Friends, My blogging Guru and my best friend and co-blogger Priya Ranjit who writes Cooklikerpriya penned this guest post for you all.. I am very excited that sarani's kitchen got a guest post from the inspirer of this blog. I met priya in swiss trip. We first introduced by taking photos of each other. We are very comfortable and enjoyed together in the whole swiss trip.. During my interactions, I came to know that Priya's passion is food blogging. In our subsequent meets, priya encouraged me to start blogging which I refused a lot but the continuous motivation and encouragement resulted Saraniskitchen. Priya never hesitated to help me in any of the blogging queries.. She is one famous cook in the blog world who stuns everyone with her recipes and who maintains her consistency in all her posts.She is also a amazing baker, awesome  photographer, enthusiastic writer and very good friend to all. I am welcoming priya on behalf of saraniskitchen!..

I am so happy when it comes to cooking for friends and today is no exception as this post is solely dedicated to my dear friend Saranya Balaji of Saranis Kitchen. We have been friends in a non-blog way, does that sound right? we got acquainted not though our blogs and we live in the same city and we do meet quite often. We ramble about our husband's, food and any random thing. A few bloggers got to meet her during the Blogger Buzz event that took place over the weekend. I am sure most people have this first impression of her being calm, down to earth and caring. That is exactly how Saranya is to me from day one, a very humble person who has great cooking skills up her sleeve and she is a great foodie too. I really wonder how she maintains her slim frame :P but tell you what she is beautiful and if you had not seen her in a saree, you sure are missing something... that gorgeous :-) ok ok enough of my ramblings I am so excited to cook for my dear friend Saranya Balaji these cute little muffins. During the BB event I seemed to know that she did now the muffins served in the event hence sending this post to her.

Blueberry muffins are great breakfast and snack muffins and a good recipe is the key to these great muffins. I have seen so many muffins that don't result in the texture as this recipe that I follow here. Its so simple to put together and you can replace blueberry with what ever berries you have in hand. These muffins are super moist and taste awesome the next day, yes you read me right. As soon as they cool down they have a crust effect on the top but don't lose heart wait to have them the next day, they will be simply gorgeous. Another great tip for great muffins is less mixing its not a cake, its small portions and they do not need much air to fluff up.

Makes ~ 12 muffins (small-medium sized)


6 Tbsp of Unsalted Butter, at room temperature
¾ of a cup of granulated Sugar
2 Eggs
½ Cup of single cream/ sour cream
1 tsp of Vanilla Extract
½ tsp of Fresh Grated Orange Zest
1 ¼ cup of Self Rising Flour
3/4 cup of Fresh Blueberries 

  • Preheat your oven to 350 F/ 180 C degrees. Line a muffin tin with paper liners and set it aside.
  • In a large bowl with an electric whisk cream together the butter and sugar, until pale and fluffy. Add the eggs, vanilla extract, cream and orange zest, whisk until the mixture is creamy and thick.
  • In a small bowl, toss together the blueberries with about 2 tbsp of the self rising flour. Set aside.
  • Add the remaining flour to the butter mixture and just mix until the flour is mixed through, do not over mix.
  • Using a spatula, fold in the blueberries making sure not to burst them.
  • Tip the batter equally in your prepared pan, upto 1/2 full and bake for 20 to 25 minutes or until when a toothpick inserted in the center comes out clean. 
  • Once done let it rest in the pan for 10 mins and then tilt it onto a wire rack to cool completely
Serve with warm cup of coffee / tea. Remember the muffins taste great the next day.

Cooks Wisdom

- Recipe calls for sour cream but you can add yogurt/ just cream this gives beautiful texture and moistness to the muffins
- Do not over mix the batter, muffins are good with less mixing
- Make sure you add less blueberries too much will result in them bursting and end up with less sponge.
- You can add a dash of lemon/ orange zest for additional flavor.
