Black Forest cake - My first wedding anniversary special :)

Dear Friends, Last week I celebrated my first wedding anniversary. So what to cook for the big occasion . I really want to prepare some dessert which my hubby likes most. Whenever my hubby come late from office, he buys the black forest cake from the near by bakery. He is addicted to black forest cake and he used to tell, black forest cake cant be cooked at home but I was confident that one day I will surprise him with home made black forest cake..Believe me friends, this is the first time I am attempting a cake. My friends gave me lots of tips to cook this cake. On wedding day, we cut the cake and celebrated the day.. My hubby was thinking for a long time that I bought this cake from the bakery. Finally I disclosed the fact that this is home made cake. He couldn't believe his eyes and he is impressed. He told me that hereafter he will not buy the cake from the bakery which made me sad because I am also a big fan of black forest cake. 



Ingredients :

For Chocolate Sponge :

Unsalted Butter
42 Grams
Self – Raising Flour
60 grams(1/2 cup)
Salt
¼ tsp
Cocoa Powder
30 grams(1/3 cup)
Eggs
4
Granulated White Sugar
135 Grams(2/3 cup)
Pure Vanilla Extract
1 tsp

For the Syrup :

Cherry Syrup
700 ml
Granulated white sugar
50 Grams(1/4 cup)

For Whipped Cream :

Heavy Whipping Cream
600 ml(2 ½ cup)
Pure Vannila Extrtact
1 tsp
Granulated white sugar
35 grams

Steps :
  1. Preheat oven to 350 degrees F or 80 degrees C or Gas Mark 8.Grease (with butter) and flour the sides of a 9 inch (23cm)round cake pan, line the base with parchment paper, set aside.
  2. In a bowl, sift the flour, salt and cocoa powder.
  3. In a heatproof bowl whisk the eggs with the sugar.Place over a saucepan of simmering water, and whisking constantly, heat until lukewarm (about 5 minutes).
  4. Remove from heat and transfer to the bowl of your electric mixer.
  5. Beat on high speed until the mixture is thick (about 5 minutes) the batter will fall back into the bowl in a ribbon-like pattern.Add vanilla extract and beat for 3 more mins.
  6. Then sift about one-third of the flour mixture over the egg mixture and gently fold in using a rubber spatula or whisk.
  7. Sift and fold in another third, and then folding the rest.Then add butter mix well till lighten it.
  8. Pour into your pan, smoothing the top.Bake for about 20 -25 minutes or until a toothpick inserted into the centre comes out clean (cake starts to shrink from sides of pan).
  9. Cool on a metal rack before removing from pan.


Whipped Cream Frosting:
  1. In your mixing bowl place the whipping cream, vanilla extract, and sugar and stir to combine.Cover and chill the bowl in the refrigerator for at least 30 minutes, then beat the mixture just until stiff peaks form.

Cherries:
  1. Drain the cherries, reserving the liquid.
  2. Place 1 cup (240 ml) of the reserved cherry syrup in a small saucepan, along with the sugar, and heat until sugar has dissolved.
  3. Remove from heat, add 2 tablespoons Kirsch(optional), and let cool.

Assemble Cake:
  1. Using a sharp knife, cut the sponge horizontally, into two layers. Turn over the top layer of the cake (top of cake becomes bottom) and place on your serving plate.
  2. Brush the cake layer with 1/4 cup (60 ml) cherry syrup.
  3. Take 1 cup of whipped cream and spread on the moistened sponge.
  4. Place the cherries evenly over the cream. Brush the cut-side of second sponge layer with 1/4 cup (60 ml) syrup.
  5. Place cut-side down on top of the cherries, gently pressing to compact. Reserve one cup (240 ml) of whipped cream and spread the remaining cream over top and sides of cake.
  6. Place reserved cream in a pastry bag fitted with a large star tip and pipe rosettes on top of cake. Cover and refrigerate the cake for several hours (or overnight) before serving.
  7. Decorate with fresh cherries and shaved chocolate.
