Valentine Treat|Linzer cookies|Whole-Wheat Almond Cookies

Valentines day is just arrived, I am pretty sure that all lovers are busy planning to do something special for their love on this lovey-dovey occasion :)This valentines day is more special for me because its my first valentines day after my marriage so it adds extra special to me...To make this special day even better, I made heart shape cookies to surprise my other part. This valentine cookie is a sweet way to express your love a someone special.

Ingredients :


Whole – Wheat Flour
1 Cup
Almond Meal(Powder)
½ Cup
Unsalted Butter
½ Cup
Sugar
1/3 cup
Milk
2 tbsp
Strawberry Jam or Any of your choice
¼ cup




Steps:

  • Preheat oven to 350 degrees F /180 degrees C/Gas Mark 5. Line two baking sheets with parchment paper.
  • In a bowl,mix the flour,sugar,almond meal well.
  • Next add butter and milk to the flour mixture to make dough. Dough should be very soft.
  • On a lightly floured surface roll out the dough until it is about 1/4 inch (.5 cm) thick. Using a cookie cutter (round, square, heart, etc.) cut out the cookies.
  • Place the cookies about 1 inch apart on the prepared baking sheet.
  • Use a smaller cookie cutter to cut out the centers of half of the cookies on the baking sheet. Reroll any scraps and cut out the remaining cookies.
  • Bake the cookies for about 12 minutes or until lightly browned around the edges. 
  • Remove from oven and place on a wire rack to cool.


Assemble cookies:

  • Place the cut out cookies on a baking sheet and lightly dust the tops with powdered sugar.
  • Spread a thin layer of jam on the bottom surface of the full cookie (top of cookie will face out). 
  • Place the cut-out cookie on top and gently sandwich them together.
  • Using a small spoon or a piping bag, fill the cut-out with a little more jam.
