South Indian Special Sambar - Idly


Sambar-idly…who doesn’t enjoy this heavenly combo for breakfast?My other part can eat them anytime of day,When it comes to breakfast, this is my perfect idea of comfort food. Sambar idly is a popular south indian breakfast recipe... When it comes to hotel recipes Hotel Saravana Bhavan Sambar-Idly is one of the famous one that is loved by people all over country.I have had Sambar-Idly in other Bhavans, but nothing can beat HSB. When ever I go to HSB I order this for sure...Finally here comes my version of sambar-idly which we enjoy every now and then...Just serve this sambar-idly topped with few drops of ghee, you will definitely enjoy this addictive,filling cute idlis..

Ingredients :

For Sambar :


Toor dal
1 cup
Onion
1
Tomato
1
Tamarind
Small Size
Vegetables chopped(Of ur choice)
1/2 cup
Turmeric Powder
½ tsp
Asafoetida / Hing
A pinch
Red chilli Powder
1 tsp
Mustard seeds
1 tsp
Cumin seeds
1 tsp
Urad dal
1 tsp
Salt
As per taste
Coriander leaves
Few
 

To Grind :


Channa Dal
2 tbsp
Fenugreek Seeds
1 tsp
Red Chilly
4
Grated Coconut
2 tbsp
Coriander seeds
1 tsp


Steps :

  • Wash and soak the dal for 10 mins..
  • Soak the tamarind in warm water for 5mins and extract the pulp.
  • Heat a tsp of oil in a pan, roast the ingredients given under “ To grind” table,allow to cool and grind it to powder.
  • Pressure cook dal with 2 cups of water until mushy and mash it well.
  • Heat a tsp of oil in pan,add mustard seeds,cumin seeds urad dal,Hing,curry leaves and fry for a min.
  • Then add chopped onion fry till golden,then add chopped tomatoes,turmeric powder cook till mushy.
  • Add chopped vegetables and mix well then add a cup water and cover the pan till vegetables turns soft.
  • Add the cooked dal,combine well and add water to adjust the consistency and bring to boil,then add the freshly ground masala powder,mix well for 5 mins.
  • Then add tamarind water and cook well.
  • Garnish with chopped coriander leaves.

For Idly :


Idly Rice
5 cups
Urad dal
1 cup
Fenugreek seeds
1 tbsp

Steps :


  • Wash and soak the rice and dal separately for 5 hours.Even soaking overnight is also ok, but 5 hours is more than enough.
  • First grind dal and fenugreek together then add rice.
  • Grind this into a smooth batter adding water in regular intervals.
  • Adding water is so important as this will help in bringing out soft idlis .
  • The consistency after grinding should not be so thick. Add salt and mix it nicely.
  • Keep it in a container and allow it to ferment for 8 to 10 hours.
  • The fermentation time depends on the outside temperature as if it is very hot you get it fermented soon, whereas in rainy season this will take extra 2 hours.
  • I allow it to sit overnight and make idlis for next day breakfast.
  • Before making the idlis in the morning mix the batter nicely using a ladle.
  • For making idlis, grease the mini Idli moul with oil. Heat the Idli pan with 1 cup of water and allow the water to boil.
  • Pour the batter in the moulds with a spoon.
  • Steam in idly cooker for 10 to 12 mins.
  • If you want to check out whether it is done, just wet your finger and insert it in a idli and it is not sticky just switch off the flame and take the idli moul out.
  • After a few seconds dip a spoon in water and carefully take out the idlis and transfer them to the serving plate. Do not take out when the idlis are hot as it will not come out properly.


To Serve :

  • Take a serving bowl and pour sambar to it.
  • Add the mini idlies to the sambar.
  • Soak them for few minutes and serve hot..
