Green Peas Kachori with Spicy Dum Aloo


Green Peas Kachori is a traditional Bengali dish.I have never tasted this before I made this today for South vs North challenge.Our friend and fellow blogger Divya Pramil from youtoocancookindianfood started this group.SNC(South vs North challenge) is a challenge between North and South indian teams. Based on our culinary expertise, we are either North team or South team.I belong to South team and I have to make the dish that the North team challenge us to make and vice versa for other team.This month challenge by the North team is hosted by Sanoli Ghosh of Sanoli'sKitchen and the challenge is to make Green Peas Kachori with Spicy Dum Aloo.This recipe was totally new to me and thanks to Divya and Sanoli didi for giving us a platform to learn new recipes of Indian origin.So here's goes my entry to this month's challenge.

Green Peas Kachori

Makes ~ 6 Kachoris

Ingredients :

For the Dough :

Flour
1 cup
Salt
To Taste
Oil
1 tbsp

For The Filling :

Green Peas
1 cup
Green Chilly
3
Asafoetida / Hing
A pinch
Ginger Paste
½ tsp
Roasted Cumin Powder
¼ tsp
Ghee
½ tsp
Salt
To Taste
Oil
For Deep Frying
Sugar
½ tsp

Steps :

For The Filling:

  • Grind green peas and green chilly along with 1 tbsp water to a coarse paste.
  • Heat ghee and add hing, ginger paste and the ground paste .Add salt, cumin powder and sugar. Keep on stirring the mixture until it becomes dry . This should take 5 minutes.
  • Allow it to cool and divide the mixture into 6 equal portions.

Making the Kachori:


  • Mix flour, salt and oil. Add enough water to make a firm dough. Keep on kneading it until soft.
  • Divide it into 6 equal portions and roll each portion into a ball
  • Roll each ball into a small circle.Place the filling in the center and bring all the edges together and pinch to seal.
  • Roll out the stuffed ball into a disc. Roll it gently otherwise the stuffing will come out of the dough.
  • Heat enough oil to deep fry, drop the rolled out disc and fry until both sides are golden, takes 30 seconds to cook each side. Serve hot along with Dum Aloo.


For Spicy Dum Aloo



Serves ~ 3

Ingredients :

Baby Potatoes
10
Asafoetida
½ tsp
Cumin seeds
½ tsp
Fennel seeds
½ tsp
Bay leaf
1
Green Peas
½ cup
Green Chillies
3 (Chopped)
Tomato
1 (Chopped)
Turmeric powder
½ tsp
Cumin powder
½ tsp
Ginger paste
1 tsp
Coriander powder
1 tsp
Kashmiri Red Chilli powder
1 tsp
Sugar
1/2 tsp
Garam Masala
1 tsp
Coriander Leaves
Few(Garnishing)
Curd / Plain Yogurt
1/2 cup
Oil
3 tbsp
Salt
To Taste


Steps :


  • Pressure Cook potatoes for 3 whistles. They must be cooked yet firm and they should not turn mushy. Peel skin and fry them with 1 tbsp oil until golden.
  • Temper with bay leaf, asafoetida, cumin seeds and fennel seeds in the same oil. Saute for 30-40 seconds.
  • Add ginger paste, green peas and chopped green chillies and fry for 2 mins.
  • Add chopped tomato and the spice powders cook til oil separates.
  • Add sugar and fried potatoes in it. Mix well for another 2-3 minutes on medium heat.
  • Whisk curd and add it to the pan. Mix well for another 2 minutes, followed by adding 1/2 cup water to make a gravy.
  • Add salt and cook until the required consistency. 
  • Serve hot along with Green Peas Kachori.
