French Almond Cake


This is a light almond cake that is great as a snack. The cake is excellent, it is deliciously moist, very fragrant and I could even taste the bits of ground almond in the crumb. A piece of this goes so well with a cup of afternoon tea, or any-time of the day. This is my first attempt for trying cakes trust me it came out very well and tastes great...

Ingredients :


Self-raising flour
50 g
Unsalted butter
120 g
Caster sugar
150 g
Eggs
3
Milk
2 tbsp
Ground almonds
100 g
Flaked almonds
1 tbsp
Vanilla extract
1 tbsp
Icing Sugar
1 tbsp(For dusting)


Steps :

  • Pre-heat oven at 180degC/Gas Mark 4. Grease (with butter) and flour the sides of a 20cm pan, line the base with parchment paper, set aside.
  • Place butter, sugar and eggs in a mixing bowl then beat with an electric mixer or whisk until light then add almond powder, flour, milk, vanilla extract then beat well.
  • When quite light and fluffy, spoon into the prepared pan and spread the batter evenly. Sprinkle the flaked almonds over the top.
  • Bake at 180degC/Gas Mark 4 for 40mins, or until the sponge just springs back when pressed, or a skewer inserted into the centre comes out clean.
  • Once the cake is completely cooled, remove from the tin and place onto a cake stand, sprinkle with icing sugar.


Note :

  • Cover the top with foil about 15-20mins into baking to prevent the top from over browning
