Poondu Vengaya Kuzhambu


A rich and spicy chettinadu special recipe is poondu vengaya kulambu. This is one of my favourite dish  since it’s  spicy with a hint of sweetness from onions. This poondu kuzhambu finds its way inti the kitchen of every south indian families at least once a week. This lip-smacking dish always there in one of my weekdays lunch. It goes well with white  rice even for idly or dosa.

Ingredients

Garlic                                           - 10 cloves
Chinna vengayam / shallots              - 8
Tomato                                        - 1
Tamarind                                      - lemon sized ball
Turmeric Powder                           - 1 tsp
Red chilli Powder                           - 2 tsp
Sambar Powder                             - 2 tsp

To Temper

Mustard seeds                                - 1 tsp
Cumin seeds                                   - 1 tsp
Fenugreek seeds                             - 1 tsb
Asafoetida / Hing                             - A Pinch
Curry Leaves                                   - 1 sprig
Red chilli                                          - 3

Method:

  1. Soak the tamarind in hot water for 20 mins. Add the turmeric powder, sambar powder, red chilli powder in tamarind water.
  2. Heat oil in kadai add the items under ‘To Temper’ table then add the onions and garlic sauté nicely.
  3. Add the chopped tomato sauté till mushy.
  4. Add the soaked tamrind water and bring to boil.
  5. Keep it in medium flame cook till the gravy thickens and oil separates.
