Aloo Palak


A simple and healthy side dish cooked with Potato and Spinach. In any Indian restaurants 'Aloo Palak' is a sure thing to appear in the vegetarian part of the menu list. A creamy gooey spinach which tastes darn good as well. I made along with roti and it was perfect for it. You can also make it as side dish for pulao rice.

Ingredients :


Spinach
1 cup
Potato
4 small one
Onion
1
Tomato
1Big one
Green chillies
5
Ginger garlic paste
1 tsp
Chilli powder
2 tsp(as per taste)
Coriander powder
2 tsp
Garam Masala
1/4 tsp
Kasoori methi
1 tsp
Yogurt
2 tbsp
Pepper
1 tsp
Sugar
¼ tsp
Salt
As needed

To Temper :

Cinnamon
1 inch
Cloves
2
Cardamom
1
Oil
2 tsp
Cuin seeds
1 tsp


Method :

  • Seperate the leaves from stem and wash the leaves.
  • Heat a pan and add the washed leaves,green chillies cook until the leaves reduce in volume in a medium flame and set aside.
  • After spinach cools down grind it to a smooth paste.
  • Cook potatoes, peel it and cube it.

  1. Heat oil in pan add items given under ' To Temper' table.
  2. Add chopped onions fry till turns golden brown and add ginger garlic paste fry till raw smell leaves.
  3. Add chopped tomatoes fry till mushy then add chilli powder,garam masala,coriander powder,kasoori methi and required salt fry for a min.
  4. Add spinach puree,sugar and cook in a medium flame for 3 mins and add ¼ cup water while it gets cooked.
  5. Then add cubed potatoes and mix well,whisk yogurt and add at this time cook in a medium flame till its done.
  6. Lastly add pepper powder mix well and switch off the flame.


Note :
  • You can add milk instead of yogurt.
  • Instead of boiling the potatoes you can deep fry the potatoes and add to the gravy.
